The Distillery
Opening in 2027, The Williams Shop Distillery will craft limited-edition spirits inspired by what we grow—bringing together the same care and intention that guide everything we build, from the gardens to the glass. Each season will shape what we cultivate, ferment, distill, and share.
In April 2026, we will plant our first orchard: Dabinett—vintage-worthy English bittersweet cider apple trees known for their depth, tannin, and structure. These trees will anchor our orchard program and become the backbone of our apple spirits and cider. Alongside them, we will plant rows of potatoes and beets, laying the foundation for a distillery rooted in the yield of our own land.
Rooted in the gardens and orchard surrounding our post-and-beam space, our small-batch distillery will be a gathering place where the work of our hands meets the character of our soil. Every bottle will carry the story of this land: grown here, distilled here, shared here.
Our Core Four
At the heart of The Williams Shop Distillery our four spirits that define who we are:
Root Awakening — distilled from our garden-grown potatoes. Clean, balanced, and unmistakably ours.
Bad Apple Beetdown — fermented from orchard-grown apples and distilled to preserve their raw character. Bright, expressive, and pure apple spirit with a bite.
Beet the Odds — distilled from beets grown in our garden beds. Vivid, earthy, and boldly unexpected.
Beetdown Apple Cider — fermented from apples grown just steps from the distillery. Crisp, clean, and a little unruly.
Together, they tell the story of this place—from first planting to final pour.
We believe good things take time. The orchard planted in April 2026 will shape the spirits released in 2027 and beyond—each bottle a reflection of patience, soil, season, and intention.
