The Distillery

Opening in 2027, The Williams Shop Distillery will produce small-batch spirits shaped by what we grow. Like everything here, it will be built with intention, rooted in the land and guided by the work of our hands.

In April 2026, we are planting our first orchard: 75 Dabinett apple trees. A classic English bittersweet variety known for its tannin and structure, Dabinett will form the backbone of our apple spirits and cider. In addition to the orchard, we are planting our first crops of sugar beets and potatoes so that every spirit we produce begins here, shaped by what we grow and the work we put into it.

Set among the gardens and orchard surrounding our post-and-beam space, the distillery will be a natural extension of what already exists here; practical, considered, and built to reflect its surroundings. What we grow will shape what we ferment and distill.

Each bottle will carry a simple idea: grown here, made here, shared here.

Our Core Four

At the heart of The Williams Shop Distillery our four spirits that define who we are:

Root Awakening — distilled from our garden-grown potatoes. Clean, balanced, and unmistakably ours.

Bad Apple Beetdown — fermented from orchard-grown apples and distilled to preserve their raw character. Bright, expressive, and pure apple spirit with a bite.

Beet the Odds — distilled from beets grown in our garden beds. Vivid, earthy, and boldly unexpected spirit.

Beetdown Apple Cider — fermented from apples grown just steps from the distillery. Crisp, clean, and a little unruly.

Together, they tell the story of this place—from first planting to final pour.

We believe good things take time. The orchard planted in 2026 will shape the spirits released in 2027 and beyond—each bottle a reflection of patience, land, and hard work.
