The Williams Shop Distillery
Opening in 2027, The Williams Shop Distillery will produce small-batch spirits shaped by what we grow here. Like everything at The Williams Shop, the distillery is being built with intention — rooted in the land and guided by the work of our hands.
Our first orchard was planted in April 2026 with 75 Dabinett apple trees, a classic English bittersweet variety valued for its tannin, structure and suitability for fermentation and distilling. In August 2026, we added another 40 apple and pear trees, bringing our young orchards to 115 trees in total.
Those trees are now established across three orchard areas spanning The Williams Shop properties. Alongside the orchards, we are developing annual crops, including sugar beets, for use in the distillery as our agricultural production and distilling program grow together.
The distillery itself is being built as an addition to our existing commissary, where part of the preparation and processing for our spirits will take place. Just steps away, our post-and-beam space will become the customer-facing side of the distillery, including our on-site store and lounge/tasting area.
Surrounded by the gardens and orchards, these spaces are all part of the same idea: growing, making and sharing what we create here.
What we grow will help shape what we ferment and distill. Apples, pears, sugar beets and future crops will give us the opportunity to develop small-batch spirits that reflect both the seasons and this particular piece of land.

We believe good things take time. The trees planted in 2026 are only beginning their story, and their production will increase as the orchards mature. As the orchards and crops develop, so will the spirits we are able to create from them — each season building on the one before.
